Chocolate Chia pudding: get thee behind me.

Yikes.  Lately I have been craving chocolate.  I don't usually have it because if I don't taste it, I don't want it.   However, I have been wishing for chocolate the last few days.  Easy enough to resist UNTIL I saw this recipe on fatfreevegan.com :  Chocolate Chia Pudding.  What better use could I put a few tablespoons of the super expensive KILOGRAM OF OrganicFairtradeRawSuperDuper Cacao powder that I bought a few months ago if a fit of crazy baking delusion?

Oh. My. Goodness.  I was unprepared for how delicious this concoction is!  If you like the slightly slimy, fish-eye texture of soaked chia (or sago/tapioca if you haven't tried chia) then you will LOVE this.  Maybe I should use a different adjective besides slimy?  Maybe slippery?  Think caviar or sago, minus the taste.  Chia is to me, basically flavourless, and the pleasantly gelatinous texture makes a lovely dessert.

1 cup soy milk

2-3 tablespoons good unsweetened cacao/ baking chocolate.

sweetener- use what you like.  Agave or good old sugar would taste great.  I use stolen packets of Splenda because I am so gangsta.

2-3 tablespoons of chia seeds.

Mix all together, til the cocoa dissolves or disperses in the soy milk, and the chia seeds are all mixed in and not clumping or anything.

Leave it on the benchtop and give it a stir once in a while for half an hour or so.  Then put it in the fridge and forget it.  Later on, look in the fridge and be amazed that there is a bowl of chocolatey, gelatinous dessert waiting for you!

Eat it!  Be careful because I find this VERY filling- although the original blog says it isn't.  Maybe my chia kept expandig after I ate it.  I felt kind of too full after eating ALL OF IT.  Maybe I should have had half, like a normal person would.

I love this so much, and after having it two nights in a row I am having kind of a mental crisis because it feels like I have been really bad, even though- not so much!
