Millet and Mushroom Concoction
Wednesday, March 7, 2012 at 8:29PM Check this recipe out. It's really good. I love millet, and I have made a mushroom and gravy concoction for ages that I usually have with wild rice mixed in on wilted greens. This is like that, kind of- only with millet!

I made it my way- just normal mushrooms, no idea what crimini mushrooms are! Used a bunch of obscure Chinese greens, instead of kale. And I added one of my awesome vegan sausages (recipe from post punk kitchen- will blog about it later!).
Very yummy, heaps of leftovers. I have had about 3 lunches as well as the initial dinner.

Have to tell you, the Iron Deficient Chef is making THE most fabulous vegan sausages I have ever tasted. She'll be selling them at markets (none near us sadly, yet...) but I'll see if I can snaffle some for a tryout for us.
Portobello mushrooms - may be good for this, I don't know, but I could live on them. Must get some millet.
At the moment I'm living out of Hugh Fearnley-Whittingstall's book Veg Every Day. No idea if the spelling is right. Sorry Hugh. Did you know he's also known as Hugh Fearlessly Eats-it-all? Yes, he is a meat eater but very dedicated to veggies.
